Sensational Spinach Protein Pancakes
Today I was making the protein pancakes from my 21-Day Alkaline Eating Plan and decided to jazz them up with some greens! These have now turned into the sensational spinach protein pancakes. Such an easy way to get 2 cups of greens into your day without even noticing! I topped them with fresh figs but you could use blueberries or a dash of maple syrup. Enjoy!
Serves: 1 ~ 380kcal ~ Vegetarian, Gluten-Free (if oats are GF), Dairy-Free
1/2 cup rolled oats
1 egg white
1 1/2 cups unsweetened almond milk (I used Luz Almond Milk)
1-2 scoops of Celebrity Trainer Superfood Protein
1 cup of baby spinach leaves
1 cup of kale leaves
Sprinkle of cinnamon
1. Blend all ingredients together in a food processor or blender to make batter.
2. Cook until golden brown.
