Quick Mango Strawberry Ice-Cream Recipe

1 frozen Banana cut into smaller chunks
1 cup frozen Mango pieces
3 frozen Strawberries
1 Can of Light Coconut Milk frozen in ice cube trays
¼ Cup Coconut Milk or Almond Milk


Prepare early by freezing the coconut milk into ice cube trays. If using fresh fruit, wash and then freeze them too. Make sure you take the skin off the banana before you freeze it! Then start by adding 3 of the frozen milk cubes to your blender or Thermomix. Add the strawberries, mango and banana, then the almond or coconut milk to the blender and blend on high. If you can’t blend it keep adding small amounts of liquid at a time until smooth and creamy. Serve immediately or put in the freezer briefly to set.
