celebrity trainer

These amazing Banana Oat & Raisin Bites are a delicious treat which are dairy-free, vegan, soy-free, gluten-free (if you use gluten free flour), refined-sugar free and don’t contain other processed nasties. They are so yummy! Try them and let me know what you think!

1 cup organic whole oats
1 cup of spelt flour
4 medium bananas (1 1/2 cups)
1/4 cup coconut oil (melted)
1/4 cup maple syrup
1/4 cup of raisins
2 tsp baking powder
1 tbsp of vanilla extract
1 tsp cinnamon
1 flax egg (1 tbsp flax seed mixed with 3 tbsp water left to sit for 15 minutes)
Flaked almonds (for garnish)

Peanut butter chocolate drizzle:
1 tbsp organic peanut butter
2 tbsp maple syrup
2 tbsp coconut oil
2 tbsp cacao powder

In a bowl, add the mashed bananas, maple syrup, coconut oil, vanilla and baking powder. Add the flax egg and mix together. Then add the oats and flour and mix well until evenly combined. Pour batter into a well greased, lined tin and cook in the oven on 160c for 30-40 mins and slightly golden on top. Leave to cool, then cut up into bite sized pieces and top with the peanut butter chocolate drizzle and flaked almonds. Alternatively you can just bake in a loaf tin and cut like a cake but I prefer the little nibbly bites.
